I went back to Tapella by Gaudi for another weekend boozy lunch with my friend A and we tried their new Flavors of the Philippines dishes. Dishes that they curated and launched in lieu of the Madrid Fusion Manila this week. Dishes that have components and flavors that are more familiar to the local palate and done with Spanish cooking techniques.
Three new dishes to check out, we had a simple and filling lunch.
Perhaps the simplest of the three new dishes but turned out to be my favorite because of its bold flavor and simplicity. Picante Vigan Sandwich has very flavorful patties made from Vigan Longganisa which I love. It’s just bursting with savory flavor and is definitely a comfort food treat.
Imagine your favorite breakfast plate of flavorful, savory, garlic-y vigan longanisa, rice, and egg in sandwich form! The bread was soft and fluffy and just enough to hold the flavorful components, the patties are filled with savory flavor and together with the egg and the gooey, creamy goodness of the yolk and kesong puti. Very good!
Our love for chicken is very strong, and this simple dish appeases those cravings, the Pollo Frito is a quarter chicken fried to a beautiful crisp served with marble potatoes with a salt crust with a slightly crispy crust and soft inner bits. It’s served with two types of sauces to add much flavor to the chicken meat, it’s also served with a side of salad so it’s pretty much a filling meal on its own.
A fun to eat and very simple dish, Huevos con Morcilla of a bed of crispy shoestring potatoes topped with their own sisig morcilla and toasted garlic and sunny side up eggs. What you do is you mix all the components together and the gooey egg yolk serves a very creamy sauce to coat the toasted, crisped up sisig morcilla bits and the potatoes. GOOD!
